Sausage And Cheddar Frittata - cooking recipe

2 None eggs
1 tbsp 2% milk
2 tbsp fresh flat-leaf parsley, chopped, plus extra, to serve
1 tbsp vegetable oil
2 None breakfast sausages
4 None button mushrooms, halved
4 None cherry tomatoes, halved
1 oz Cheddar cheese, grated
Preparation

Preheat broiler. Whisk together eggs, milk and parsley. Heat oil in an 8 inch nonstick frying pan. Cook sausages and mushrooms for 6-8 mins, or until sausages are cooked through. Let cool slightly then cut sausages in half lengthwise.
Arrange tomatoes, sausages and mushrooms in frying pan. Place over low heat. Pour egg mixture over meat and vegetables and stir briefly to distribute mixture. Cook, without stirring, for 3 mins, or until slightly firm around the edges. Sprinkle with cheese.
Transfer to oven and broil for 3 mins, or until top is golden and set. Serve sprinkled with extra parsley.
