Grilled Vegetables - cooking recipe

1/4 cup garlic olive oil
2 tbsp white balsamic vinegar
1 tsp minced garlic
1 None lemon, zested and juiced
2 None zucchini, sliced
2 None yellow squash, sliced
3 None bell peppers, sliced
1/2 lb asparagus
1 None large red onion, cut into wedges
Preparation

Preheat grill. Whisk together olive oil, vinegar, garlic, 1/2 tsp lemon zest, and 1 tbsp lemon juice. Season. Add vegetables and toss to coat. Grill for 1-2 mins per side, or until tender. Arrange on a serving platter.
