Salmon Cakes - cooking recipe

Ingredients
    1 package (4 oz) instant mashed potatoes
    1 can (15 oz) red salmon, drained, boned and skin removed
    2 None green onions, thinly sliced
    None None Salad, to serve
    None None Mayonnaise, to serve
    None None Lemon wedges, to serve
Preparation
    Prepare mashed potatoes in a large bowl according to package directions.
    Flake in salmon and add onion. Season to taste and mix well. Shape evenly into 8 patties. Arrange on a tray and refrigerate, covered, for 30 mins.
    Heat a little oil in a large skillet on medium heat. Cook patties for 4-5 mins each side, until golden. Drain on paper towels. Serve with salad, mayonnaise and lemon wedges.
