Mushroom And Labne Sandwich - cooking recipe

Ingredients
    3 oz cremini mushrooms, roughly chopped
    3 oz button mushrooms, roughly chopped
    1 clove garlic, minced
    2 tsp fresh thyme leaves
    2 thin slices sourdough bread
    3 tbsp labne
    2 None radicchio leaves
    2 tsp olive oil
Preparation
    Lightly coat a large nonstick frying pan with oil and place over medium heat. Cook mushrooms, garlic and thyme for 5 mins, or until browned.
    Top bread with 2 tbsp labne, the mushroom mixture, radicchio leaves then remaining labne. Drizzle with olive oil to serve.
