Ingredients

1 None cauliflower, cut into florets and finely chopped
1 None egg
9 oz light mozzarella, grated
1 tbsp olive oil
1/2 lb ground pork or beef
4 None scallions, sliced
8 sprigs fresh oregano, chopped
1 14 oz can chopped tomatoes
Preparation

Preheat the oven to 400\u00b0F. Line a baking tray with parchment paper. In a bowl, mix the cauliflower, egg and half of the mozzarella. Season with salt. Divide into 4 portions and form into 4 flat ovals on the baking tray. Bake for 20 mins.
Meanwhile, heat the oil in a frying pan and cook the meat until crumbly. Reserve a few scallion slices for garnish, add the remainder to the pan and fry for 2 mins. Add the oregano and season with salt and black pepper. Stir in the tomatoes.
Remove the cauliflower bases from the oven and top with the meat mixture. Sprinkle with the remaining cheese. Return to the oven and bake for 12 mins, until the cheese is golden and bubbling. Sprinkle with the reserved scallions.
