Spicy Green Tomato Relish - cooking recipe

Ingredients
    2 1/4 lbs green tomatoes, sliced
    2 1/4 lbs pickling cucumbers, chopped
    1 None onion, sliced
    1 None green pepper, chopped
    1/2 cup kosher salt
    2 cups cider vinegar
    1 cup white vinegar
    1 tsp ground mustard
    1/2 tsp ground allspice
    1/4 tsp mixed spice, such as pumpkin pie spice
    1/2 tsp ground cinnamon
    1/4 tsp ground black pepper
    1 cup firmly packed brown sugar
Preparation
    Combine the vegetables in a large bowl. Sprinkle with the salt; cover. Let stand for several hours. Rinse under cold water; drain well.
    Combine the vegetables, vinegars and spices in a large saucepan. Bring to a boil. Reduce heat to low; simmer, uncovered, stirring occasionally, for about 45 mins. Add the sugar and stir, without boiling, until the sugar is dissolved. Bring to a boil and boil, uncovered, for 15 mins.
    Pour into hot sterilized jars; seal immediately. Label and date jars when cold. Store in a cool dry place. Once opened, store in the refrigerator.
