Caramelized Carrots - cooking recipe

Ingredients
    2 tbsp butter
    1 tbsp olive oil
    6 None medium carrots, peeled and sliced thickly
    2 tbsp sugar
    1 tbsp flat-leaf parsley, finely chopped
    1 tbsp balsamic vinegar
Preparation
    Heat the butter and oil in large frying pan, then add the carrots and cook, covered, until just tender.
    Add the sugar and cook, stirring, for about 10 mins or until the carrots caramelize. Stir in the parsley and vinegar and serve.
