Spicy Chicken With Tomatoes - cooking recipe

Ingredients
    1 tbsp olive oil
    2 None chicken breast
    1/3 cup green onions, trimmed and chopped
    4 None tomatoes, sliced
    2/3 cup tomato juice
    1 cup corn, frozen or canned
    1/2 15 oz can kidney beans, drained
    2 sprigs parsley, chopped, plus extra to garnish
    2 sprigs oregano, chopped, plus extra sprigs to garnish
    1-2 tsp Tabasco
    1 None onion, peeled and diced
    None None pickled peppers, to serve
    None None tortilla chips, to serve
Preparation
    Heat the oil in a frying pan, add the chicken breast and fry for 5-6 mins each side until sealed and lightly golden. Add the green onions to the pan with the tomatoes, tomato juice, corn and kidney beans. Simmer for 10 mins.
    Stir in the parsley, oregano and Tabasco. Season to taste with salt and freshly ground black pepper. Serve sprinkled with the diced onion and the pickled peppers. Garnish with the extra chopped parsley. Serve with tortilla chips, if liked.
