Hearty Winter Vegetable And Couscous Soup - cooking recipe

Ingredients
    1 tbsp olive oil
    2 None onions, coarsely chopped
    3 None celery stalks, coarsely chopped
    1 clove garlic, crushed
    1 tsp sweet paprika
    3 None potatoes, coarsely chopped (about 1 lb)
    2 None parsnips, chopped coarsely (about 1 lb)
    2 None carrots, coarsely chopped
    1 3/4 cups chicken or vegetable stock
    5 cups water
    1/2 cup couscous
    2 tbsp coarsely chopped fresh flat-leaf parsley
Preparation
    Heat oil in large pot and stir onion, celery, garlic and paprika over medium heat until onion is soft, about 5-7 minutes.
    Add potato, parsnip, carrot, stock and water and bring to a boil. Reduce heat and simmer with lid on for about 15 mins or until vegetables are tender.
    Stir in couscous and parsley. Cook with lid off for 2 mins or until couscous is tender.
