Salmon And Spinach Farfalle - cooking recipe

Ingredients
    14 oz farfalle pasta
    3 tbsp oil
    1 None onion, finely chopped
    1 clove garlic, minced
    18 oz spinach
    1 None lemon, zested, 1 tsp reserved
    3/4 cup vegetable stock
    3/4 cup heavy cream
    14 oz salmon fillet, skin removed, cut into cubes
Preparation
    Cook pasta in boiling salted water until al dente. Drain and keep warm.
    Meanwhile, heat 1 tbsp oil in a saucepan and saute onion and garlic until softened. Add spinach, cover and cook for 3 mins. Add lemon zest and season. Add stock and cream and bring to a boil.
    Heat remaining oil in a frying pan. Saute salmon for 3 mins, turning. Season. Add to spinach along with pasta. Heat through and season. Sprinkle with reserved lemon zest to serve.
