Lamb And Halloumi Kebabs - cooking recipe

Ingredients
    1/4 cup lemon juice
    2 cloves garlic, crushed
    2 tsp dried oregano
    1 lb lamb leg steaks, trimmed, cubed
    9 oz halloumi cheese, cubed
    2 None lemons, halved
    None None Herbed Salad
    1/2 head iceberg lettuce, shredded
    4 None tomatoes, chopped
    2 None cucumbers, chopped
    1 bunch parsley, chopped
    1 bunch mint, chopped
    1 tbsp extra virgin olive oil
    None None Flatbread, to serve
Preparation
    In a shallow dish, combine lemon juice, garlic and oregano. Add lamb and toss to coat. Cover and marinate in the fridge for at least 2 hours, basting occasionally.
    Preheat a grill or grill pan on medium. Thread lamb and halloumi onto skewers. Grill for 8-10 mins, turning and basting with marinade, until cooked and cheese is golden. Add lemon halves to grill and cook 3-4 minutes, until warmed through.
    To make herbed salad, toss all ingredients together in a large bowl and season to taste.
    Serve skewers with salad, grilled lemon and flatbread.
