Zesty Chicken Burgers - cooking recipe

Ingredients
    1 lb lean ground chicken
    1 None egg, lightly beaten
    1 tbsp dried sage
    1 None lemon, peel finely grated and lemon juiced
    3 tbsp olive oil
    1 bunch green onions, chopped
    1/4 cup flour, seasoned with salt and pepper
    8 slices bread
    1/2 cup mayonnaise
    1 cup mixed salad leaves
Preparation
    Combine the ground chicken, egg, sage and lemon peel in a large bowl. Season and mix well. Shape evenly into 4 patties. Cover and refrigerate for 20 mins.
    Heat 1 tbsp of the oil in a large skillet on medium heat. Saute the onion for 2-3 mins, stirring occasionally, until tender. Remove from the pan and keep warm. Wipe the pan clean.
    Dust the patties in seasoned flour, shaking off the excess. Flatten slightly. Heat the remaining 2 tbsp oil in the same pan on medium heat. Cook the patties for 4-6 mins each side, until golden and cooked through. Squeeze the lemon juice over the patties.
    Spread the mayonnaise on the bread and top 4 slices with salad leaves, onion and patties. Top with the remaining bread slices and serve.
