Glazed Chicken Drumsticks With Chickpea Salad - cooking recipe

Ingredients
    8 None chicken drumsticks
    6 tbsp olive oil
    1 tsp paprika
    3 tbsp honey
    3 tbsp orange juice
    2 tbsp white wine vinegar
    1 (14 oz can) can chickpeas, drained
    1 cup cherry tomatoes, halved
    1 None avocado, de-stoned, peeled, flesh chopped
    5 sprigs parsley, chopped
    5 sprigs chervil, chopped, plus extra sprigs to garnish
Preparation
    Preheat the oven to 400\u00b0F. Rub the chicken drumsticks with 2 tbsp of the oil. Sprinkle over the paprika and season with salt and freshly ground black pepper. Place on a baking tray and bake for 35-40 mins until cooked through and the skin is crispy.
    Meanwhile, mix 2 tbsp of the honey with 2 tbsp water. Brush over the chicken legs 5 mins before the end of cooking time.
    To make the salad dressing, mix the remaining honey with the orange juice, vinegar and remaining oil. Season to taste with salt and freshly ground black pepper.
    Place the chickpeas in a bowl with the cherry tomatoes and avocado. Drizzle over the dressing and toss well. Toss through the chopped herbs just before serving. Serve with chicken and garnish with the extra chervil sprigs.
