Pesto Potato Salad - cooking recipe
Ingredients

1 1/3 lbs new potatoes
14 oz mixed salad leaves
1 None small onion, peeled and finely diced
6 tbsp green pesto
1/4 cup vegetable stock
3 oz Prosciutto, sliced
Preparation

Cook the potatoes in boiling water for about 20 mins. Mix the diced onion with the pesto and stock. Drain the potatoes, rinse them in cold water and cut them in half. Mix the salad, potatoes and pesto dressing and serve them in a large bowl, garnished with Prosciutto.
