Souffléd Oysters - cooking recipe
Ingredients

24 None oysters, shucked, bottom shells cleaned and reserved
1/3 cup heavy cream
2 tbsp finely grated Parmesan cheese
1 None large egg white
2 tbsp finely chopped fresh chives
Preparation

Preheat oven to 400\u00b0F. Arrange oysters in shells on a baking tray.
Combine cream and 1/2 the Parmesan. Season to taste. Whip egg whites to stiff peaks then fold into cream mixture. Spoon 1 tbsp over each oyster then sprinkle with remaining cheese and chives. Bake for 5-10 mins, until golden and puffed.
