Rye Bread - cooking recipe

Ingredients
    3 cups all-purpose flour
    1 1/2 cups rye flour
    1 tbsp salt
    1 1/2 tsp active dry yeast, dissolved in 1 2/3 cups lukewarm water
    2 tbsp olive oil
Preparation
    Mix flour, salt and yeast water. Add oil and knead with the dough hook of a mixer, then with your hands, until soft. Place in a large, clean bowl, cover with a clean tea towel and allow to rest in a warm place for 2 hours.
    Grease and flour a 12 x 4 inch loaf pan. Turn the dough out on to a floured work surface and knead again with your hands. Shape into a 12 inch long loaf and press gently into the pan. Cover and allow to rest in a warm place for 1 hour.
    Preheat oven to 400\u00b0F. Bake for 35-40 mins, until a skewer comes out clean. Allow to cool slightly, then remove from pan and allow to cool completely on a wire rack.
