Chicken Salad With Sesame Dressing - cooking recipe

1 clove garlic, crushed
4 sprigs fresh cilantro
4 None chicken breast fillets
1 head lettuce, chopped
7 oz broccoli, cut into small florets
3.5 oz snow peas
1 None English cucumber, peeled halved, sliced
2 stalks celery, trimmed, sliced
1/2 None small red onion, sliced thinly
1/3 cup olive oil
1/4 cup white wine vinegar
1/2 tbsp soy sauce
1 tsp sesame oil
2 tbsp granulated sugar
2 tsp sesame seeds, toasted
Preparation

Fill a medium pot with water. Add 2 tsp salt, smashed garlic and cilantro sprigs. Bring to a boil and add chicken. Reduce heat and cook, covered, in barely simmering water for about 8 mins, or until chicken is just cooked through. Remove chicken from pan, cover and let rest for 5 mins. Slice or shred.
Meanwhile, combine lettuce, broccoli, snow peas, cucumber, celery and onion. Divide between serving bowls. Top with chicken. Whisk together olive oil, white wine vinegar, soy sauce, sesame oil and sugar then drizzle over salads. Sprinkle with toasted sesame seeds and serve.
