Mini Lamb And Eggplant Pizzas - cooking recipe

Ingredients
    6 None small pizza bases
    2 None tomatoes, sliced
    1 tbsp olive oil
    1 None medium eggplant, thinly sliced
    2 None lamb noisettes (boneless lamb chops), flattened
    1/2 cup plain yogurt
    1 tbsp fresh mint leaves, chopped
    1 tsp lemon juice
    1 bunch arugula, washed, stems removed
Preparation
    Preheat oven to 400\u00b0F. Place pizza bases on a greased baking tray. Arrange tomatoes over top, leaving a narrow border around edges. Drizzle with olive oil. Cook according package instructions.
    Preheat broiler. Brush eggplant with oil. Broil for 3 mins per side, until golden and tender. Brush lamb with oil. Season. Broil for 3-4 mins per side, or until cooked to your liking. Slice thinly.
    In a bowl, combine yogurt, mint and lemon juice. Season. Top pizzas with eggplant, arugula and lamb. Drizzle with yogurt mixture. Serve warm.
