Pomme Anna - cooking recipe

Ingredients
    1 3/4 lb small Idaho or russet potatoes, peeled, cut into 1/16 inch-thick slices
    4 tbsp salted butter, melted
    2 tsp chopped fresh thyme leaves, plus 2 sprigs for garnish
    1/2 cup shredded Gruyere cheese
    1/4 cup chopped sun-dried tomatoes in oil
Preparation
    Preheat oven to 425\u00b0F. Grease a pie dish.
    Arrange 1/3 of potato slices in prepared dish. Top with 1 tbsp butter, 1 tsp thyme, 1/2 the cheese and 1/2 the tomatoes. Repeat layering. Top with remaining potatoes and butter. Season. Cover tightly with foil and bake for 50 mins. Uncover and bake for another 15 mins. Let rest for 5 mins then invert onto a serving plate. Garnish with thyme sprigs.
