Savory Cheese Pancakes - cooking recipe

Ingredients
    1 cup self-rising flour
    1 cup milk
    1 None egg, lightly beaten
    1 cup grated Cheddar cheese
    1/4 cup snipped chives
    1/2 cup spreadable cream cheese
    1 None celery stalk, finely diced
Preparation
    Sift the flour into a large bowl. Add the milk and egg and whisk until a smooth batter forms. Stir in the grated cheese and chives.
    Heat a large nonstick skillet on medium heat and spray with no stick cooking spray. Place tablespoons of batter in pan. Cook for 2 mins on one side, then turn and cook for another minute. Remove from the pan. Repeat with the remaining batter to make a total of 15 pancakes. Set aside to cool.
    Combine the cream cheese and celery in a small bowl and season to taste. Spread the cream cheese mixture over 10 pancakes. Stack 2 pancakes together, cream cheese side up, then top with a plain pancake to form 5 triple-decker stacks. Serve.
