Garlic Herb Roasted Chicken - cooking recipe

Ingredients
    2 tbsp olive oil
    2 tbsp mixed chopped fresh herbs, like thyme, rosemary, sage
    1 tbsp chicken seasoning, like Mrs. Dash
    2 tsp fine sea salt
    1 tsp ground black pepper
    1 (6 3/4 lb) roaster chicken
    1/2 cup peeled garlic cloves
    1 None large onion, peeled, sliced
    3 cups chicken broth
    1/2 cup white wine
Preparation
    Preheat oven to 350\u00b0F. Combine olive oil, herbs, seasoning, salt and pepper.
    Place chicken on a rack in a roasting pan and rub with oil mixture. Place garlic cloves, onion and 1 1/2 cups chicken broth in bottom of pan. Roast for 1 hour 30 mins, or until internal temperature is 175\u00b0F. Transfer chicken to a platter, cover and let rest for 20 mins.
    Meanwhile, for the pan sauce, skim fat from pan juices. Place pan over medium heat. Add wine. Bring to a boil, scraping up brown bits from bottom pan. Mash garlic and onion with a fork. Add\r\nremaining chicken broth and simmer for 5 mins. Season.
