Turkey Quesadillas With Avocado Salsa - cooking recipe

Ingredients
    2 tbsp olive oil
    1 None red bell pepper, deseeded, chopped
    1 None red onion, finely chopped
    2 cloves garlic, minced
    2 tsp ground cumin
    1/4 tsp cayenne pepper
    12 None tortillas
    12 oz Cheddar cheese, grated
    1 lb roast turkey, cut into chunks
    None None FOR THE SALSA
    2 None avocados, pitted, peeled, chopped
    1 None tomato, deseeded, chopped
    2 tbsp fresh cilantro leaves, chopped
    1/2 None red onion, finely chopped
    1 None lime, juiced
Preparation
    Heat 1 tbsp oil in a large frying pan over medium heat. Saute pepper, onion and garlic for 3-4 mins, until tender. Add cumin and cayenne and cook, stirring, for 1 min. Set aside.
    Place 6 tortillas on a clean work surface. Top each with 1 oz cheese, pepper mix, turkey and another 1 oz cheese. Cover with remaining tortillas. Working in batches, heat oil in a large frying pan over medium heat and cook quesadillas for 2-3 mins per side, or until golden. Set aside and keep warm.
    For the avocado salsa, combine all ingredients. Season to taste.
    Cut quesadillas into wedges. Serve with avocado salsa.
