Pineapple And Beef Salad - cooking recipe
Ingredients

1 lb beef sirloin steak, thinly sliced
2 tbsp oyster sauce
1 tbsp oil
4 oz rice noodles
1/2 None fresh pineapple, peeled, quartered, cored and thinly sliced
1 None cucumber, chopped
4 oz snow peas, halved diagonally
1/3 cup honey roasted cashews, crushed
None None Basil leaves, for garnish
None None FOR THE DRESSING
2 None limes, peel finely grated and limes juiced
2 tbsp brown sugar
2 None kaffir lime leaves, finely shredded
2 tsp fish sauce
1 None bird's-eye chili pepper, thinly sliced, plus additional, for garnish
Preparation

Combine steak, oyster sauce and oil in a large bowl. Season to taste. Cover and refrigerate for 10 mins.
Cook noodles in a large saucepan of boiling water for 3-4 mins, until softened. Drain well and set aside.
Heat a wok or large skillet on high heat. Cook beef in 2 batches, for 1-2 mins each side, until browned.
For the dressing, whisk all ingredients in a small bowl.
Toss noodles, pineapple, cucumber, snow peas and 1/2 the dressing in a large bowl. Just before serving, add beef and toss to combine. Drizzle with remaining dressing. Serve topped with cashews, basil leaves and additional chili pepper.
