Roasted Stuffed Turkey Roll - cooking recipe

Ingredients

    2 tbsp butter
    1 None small onion, peeled and finely chopped
    1 None pear, unpeeled, cored, grated
    2 oz cubed day old bread, toasted
    1/2 cup chopped walnuts, toasted
    1/4 cup chopped pitted prunes
    2 tbsp chopped flat-leaf parsley
    2 tbsp chopped sage

    2 lbs whole turkey breast with bone removed
    8 None slices prosciutto
    1 tbsp olive oil
    1 cup dry white wine
    None None prepared gravy, to serve (optional)
    None None roast vegetables with rosemary, to serve
Preparation
    Preheat the oven to 400\u00b0F. To make the stuffing, heat the butter in a pan over a medium heat. Cook the onion, stirring, for 5 mins, until softened and golden. Add the pear. and cook for another 4 mins, until softened. Combine the onion mixture with the remaining stuffing ingredients. Season.
    Place the turkey skin side down on a work surface. Use a sharp knife to open out thick sections of the turkey and form one large rectangle. Arrange the stuffing lengthwise down the center, then roll to enclose. Place the turkey roll seam side down and cover with prosciutto. Use string to tie up the roll at 1.5 inch intervals.
    Place the oil and butter in a roasting pan. Heat in the oven for 5 mins, then add the turkey, turning to coat. Add the wine to the pan.
    Roast for 45-55 mins, basting the turkey frequently with the pan juices, until the meat juices run clear when a skewer is inserted into the center. Cover loosely with foil. Leave to rest for 15 mins.
    Remove the string from the turkey and cut into slices. Serve with gravy and roasted vegetables with rosemary.
