Caramelized Onion And Goat Cheese Melts - cooking recipe

Ingredients
    2 tbsp butter
    1 tbsp honey
    4 None medium red onions, peeled and sliced
    5 tbsp red wine vinegar
    1 1/4 cups red wine
    8 slices hearty seeded bread
    5 oz herbed goat cheese
    2 tbsp olive oil
    4 oz mixed baby greens
Preparation
    Preheat oven to 350\u00b0F. In a large skillet, heat butter and honey. Add onions and cook for 8 minutes, stirring occasionally, until softened but not brown. Add vinegar and red wine. Simmer until almost all the liquid has evaporated, approximately 15 minutes. Season to taste.
    Place bread on a baking sheet and spread each slice with goat cheese. Spoon over onions and drizzle with olive oil. Bake for 15 mins. Serve with mixed greens.
