Feta Stuffed Chicken With Vegetables - cooking recipe

Ingredients
    1 None carrot, peeled and cut into matchsticks
    1 small parsnip, peeled and cut into matchsticks
    1 small onion, peeled and cut into wedges
    2 None baby zucchini, guartered
    2/3 cup chicken stock
    2 tsp honey
    1 tsp soy sauce
    1/3 cup crumbled feta cheese
    2 tsp fresh chopped parsley
    1 None boneless skinless chicken breast (about 6 oz)
    3 slices prosciutto
Preparation
    Preheat the oven to 400\u00b0F. Place the vegetables in a small baking dish. Mix the chicken stock, honey and soy sauce. Pour over the top. Bake for 15 mins.
    Meanwhile, mix the feta cheese and parsley. Cut a deep pocket in the side of the chicken breast; fill with the feta mixture. Wrap the prosciutto around the chicken. Place on top of the vegetables. Season with freshly ground black pepper.
    Bake 20-25 mins until the chicken is cooked through and the vegetables are tender. Slice the chicken and serve with the vegetables.
