Ingredients

2 1/2 tbsp butter
2 None lemons, zested and juiced
2/3 cup whole milk
2 None eggs
4 tbsp all-purpose flour
1 cup granulated sugar
1/2 cup shredded coconut
1 tsp baking powder
Preparation

Preheat oven to 350\u00b0F. Grease 4 - 8.5 oz ramekins.
Melt butter. Remove from heat and stir in lemon juice and lemon zest. Whisk together milk and eggs. In a separate bowl, combine flour, sugar, coconut and baking powder. Add lemon butter and milk mixture to dry ingredients and beat until smooth. Distribute between prepared ramekins and bake for 20-25 mins.
