Lamb With Couscous Salad - cooking recipe

Ingredients
    1 tsp oil
    2.5 oz couscous
    2.75 oz lamb, cubed
    1 tsp sambal oelek
    1/4 None red pepper, diced
    1 tsp white wine vinegar
    3 sprigs fresh parsley, chopped + some for garnish
    1 oz cucumber, diced
    None None ground cumin, to taste
Preparation
    Bring 1/3 cup water, 1/2 tsp oil and a pinch of salt to a boil. Remove from heat, add couscous, cover and set aside for about 5 mins, stirring occasionally.
    Meanwhile, heat 1/2 tsp oil in a non-stick frying pan, add lamb and saute until browned. Add 2 tbsp water and sambal, season then set aside and keep warm.
    To serve, toss couscous with pepper, vinegar, parsley and cucumber then season and add cumin to taste. Serve with lamb, garnished with parsley.
