Lasagne - cooking recipe

1 None batch Fresh Pasta Dough (see recipe on the website)
1 1/2 cups grated mozzarella cheese
None None FOR THE MEAT SAUCE
1 tbsp oil
1 lb ground beef
1 clove garlic, crushed
2 cans (14 oz each) diced tomatoes
2 tbsp tomato paste
1 tbsp shredded basil
None None FOR THE CHEESE FILLING
3 cups ricotta cheese
2 None eggs, lightly beaten
1/2 cup grated Parmesan cheese
1 tbsp chopped parsley

Roll out pasta to 1/16 inch-thick sheets and cut into 13 x 2 1/2-inch strips. Set lasagne sheets aside.
For the meat sauce, heat oil in a large skillet on high heat. Add ground beef and garlic and cook for 8-10 mins, stirring often, until browned. Add remaining ingredients and season to taste. Reduce heat to low and simmer, partially covered, for 30 mins, stirring occasionally, until sauce thickens slightly.
Meanwhile, for the cheese filling, combine all ingredients in a large bowl. Season to taste and set aside.
Preheat the oven to 350\u00b0F. Lightly grease a 13 x 9-inch baking dish. Cook lasagne sheets in batches in a large saucepan of boiling, salted water for 4 mins, until just tender. Drain and spread on a clean tea towel.
Cover bottom of prepared dish with one layer of lasagne sheets. Top with 1/2 of cheese filling, 1/3 of mozzarella cheese and 1/3 of meat sauce. Repeat layers, finishing with a layer of meat sauce topped with mozzarella.
Bake for 30 mins. Let stand for 10 mins before serving.
