Prune And Prosciutto Chicken - cooking recipe

Ingredients
    1 tbsp Dijon mustard
    4 None chicken thighs, each pounded to 1/3 inch thick
    12 None pitted prunes
    8 None fresh sage leaves
    4 slices prosciutto
    1 tbsp olive oil
    None None steamed green beans, to serve
Preparation
    Preheat oven to 400\u00b0F.
    Spread mustard over chicken thighs. Season to taste. Arrange 3 prunes and 2 sage leaves in the center of each thigh then roll up tightly. Wrap a slice of prosciutto around each roll and tie with butcher's twine to secure.
    Heat oil in an ovenproof frying pan over high heat. Cook chicken, turning, for 4-5 mins, until golden brown. Transfer pan to oven and bake for 12-15 mins, until cooked through. Serve sliced with green beans.
