Pork Chops With Braised Vegetables And Apple Salsa - cooking recipe

Ingredients
    2 tbsp olive oil
    4 (3.5 oz) boneless pork chops
    1 tbsp ground black pepper
    1 oz red cabbage, shredded
    1/3 cup chicken stock or white wine
    1 tbsp lemon juice
    1 bunch Chinese broccoli, trimmed, halved
    None None Spicy Apple Salsa
    1 None green apple, finely chopped
    2 tbsp lemon juice
    1 None long red chili, deseeded, finely chopped
Preparation
    In a large frying pan, heat 1 tbsp oil over high heat. Sprinkle pork with pepper. Cook for 3 mins then flip over and cook for another 2 mins. Set aside, covered, to rest.
    Add remaining oil to pan. Saute cabbage for 1 min over medium heat. Add stock and lemon juice. Simmer for 3-4 mins, stirring, until cabbage is tender. Add broccoli and cook, covered, for another 2 mins, until broccoli is just tender. Season.
    Meanwhile, to make the apple salsa, mix all ingredients together in a bowl. Season.
    Serve pork on a bed of vegetables. Top with apple salsa.
