Corned Beef With Parsley Sauce - cooking recipe

Ingredients
    2 1/4 lb corned beef
    1 tbsp brown sugar
    1 tbsp vinegar
    5 None whole cloves
    2 None bay leaves
    None None Parsley Sauce
    3 1/2 tbsp butter
    1/2 None small onion, finely chopped
    2 tbsp flour
    2 cups milk
    2 tbsp fresh parsley, chopped
    None None steamed vegetables, to serve
    None None mustard, to serve
Preparation
    Place beef in a saucepan with sugar, vinegar, cloves and bay leaves. Add water to cover. Bring to a boil, reduce heat, cover and simmer for around 1 hour 15 mins, until a skewer inserted in corned beef is easily removed. Remove from heat and let cool in liquid.
    Meanwhile, to make the parsley sauce, melt butter over medium heat. Cook onion for 2 mins, until soft. Add flour and cook for 2 mins, stirring. Stir in milk. Bring to a boil, stirring, until thickened. Season. Add parsley.
    Slice beef and serve with parsley sauce, steamed vegetables and mustard.
