Rustic Salmon And Olive Tart - cooking recipe

Ingredients
    2 sheets frozen puff pasty, thawed
    8.75 oz skinless salmon fillet, de-boned
    2 tsp olive oil
    1 None egg, beaten
    2 oz mozzarella cheese, grated
    2 tbsp small fresh dill sprigs
    2.5 oz stuffed green olives, halved
    None None mixed greens, to serve
Preparation
    Preheat oven to 400\u00b0F. Line a baking tray with parchment paper.
    Join puff pastry sheets together to make a rectangle, overlapping by 1/3 inch. Transfer to prepared tray and bake for 10 mins.
    Meanwhile, brush salmon with oil. Season. Heat a large frying pan over medium heat. Cook salmon for 2-3 mins per side, until just cooked through.
    Brush pastry with egg. Bake for another 5 mins, until crisp and golden. Sprinkle with cheese and dill. Flake salmon over top. Add olives. Bake for 10-15 mins, until crisp and golden. Serve with mixed greens.
