Chocolate Muffin Baked Alaska - cooking recipe

4 large chocolate muffins
1/3 cup orange marmalade
1 cup chocolate ice cream
3 None egg whites
3/4 cup firmly packed light brown sugar
1 tsp finely grated orange peel

Cut tops off muffins. Hollow out muffin centers, leaving a 1/3-inch border. Reserve muffin scraps for another use.
Drop level tablespoons of marmalade into each muffin. Top with ice cream. Place muffins on a baking pan. Freeze about 1 hour or until firm.
Preheat the oven to 450\u00b0F.
Just before serving, beat egg whites in medium bowl with electric mixer until soft peaks form. Gradually add sugar, beating until dissolved between additions. Beat in orange peel. Spread meringue over muffins.
Bake about 2 mins or until lightly browned. Serve immediately.
