Beet Tzatziki With Beet Crisps - cooking recipe

Ingredients
    3 None medium beets, peeled, 1 coarsely grated and excess water squeezed out, remainder thinly sliced
    1/2 cup Greek yogurt
    1 clove garlic, minced
    None None vegetable oil, to deep-fry
Preparation
    For the beet tzatziki, combine grated beet, yogurt and garlic. Season.
    Meanwhile, heat oil into a large heavy-bottomed saucepan over medium heat. Working in batches, deep-fry sliced beets for 1-2 mins, until crisp. Drain on paper towels. Season. Serve immediately with tzatziki.
