Grilled Vegetables And Couscous - cooking recipe

Ingredients
    2 cups couscous
    1/2 cup chopped cilantro
    1/2 None lemon, peel grated and lemon juiced
    4 None baby eggplant, thinly sliced lengthwise
    3 None zucchini, thinly sliced lengthwise
    1 None red pepper, seeded and thickly sliced
    3/4 cup plain yogurt
    1/4 cup chopped mint
    1 clove garlic, crushed
Preparation
    Bring 2 cups water to a boil in medium saucepan on high heat. Remove from heat and add couscous. Cover and let stand for 5 mins. Fluff the grains with a fork. Stir in the cilantro and lemon peel and juice.
    Meanwhile, heat a grill pan on high heat or preheat the grill to medium-high. Spray the vegetables with no stick cooking spray. Cook in batches for 2-4 mins each side, until tender.
    Combine the yogurt, mint and garlic in a small bowl and season to taste. Serve the couscous with the vegetables and mint yogurt on the side.
