Garlic Soup With Croutons - cooking recipe
Ingredients

250 g white bread, crusts removed and cubed
6 tbsp olive oil
4-6 cloves garlic, peeled and finely diced
1 None onion, peeled and finely diced
5 None tomatoes, seeded and diced
3 None small red bell peppers, seeded and chopped
1 None small red chilli pepper, seeded and chopped
1 tsp sugar
1.5 litres vegetable stock
3 stalks parsley, chopped finely

For the croutons, heat 4 tbsp oil in a skillet and toast the cubed bread for 5 mins until golden. Set aside.
Heat the remaining oil in a pot and sweat the garlic, onion and chili over low-medium heat for 5 mins. Add the sugar and bell peppers and lightly caramelize. Add the stock, cover and simmer for 20 mins. Add the tomato and croutons and cook for an additional 10 mins. Serve sprinkled with parsley.
