Seafood Medley With Dipping Sauce - cooking recipe

Ingredients
    1/2 cup sour cream
    1/4 cup mayonnaise
    2 tbsp ketchup
    2 None large eggs, lightly beaten
    1/4 cup soft, fresh wholewheat breadcrumbs
    1 cup freshly grated parmesan
    1 lb fresh firm boneless white fish fillets cut into 1/2 inch strips
    1/2 cup all purpose flour
    14 oz packet frozen crumbed calamari
    1 1/2 lbs packet frozen potato wedges
    None None cooking oil spray
    None None lemon wedges, to serve
Preparation
    To make the dipping sauce, combine the sour cream, mayonnaise and ketchup in a small bowl. Season to taste, then refrigerate
    Preheat the oven to 425\u00b0F. Line a baking tray with parchment paper. Next, place the beaten eggs in a small bowl, then combine the breadcrumbs and parmesan in another wide-rimmed bowl. Put the fish and flour in a large, resealable, food storage bag. Seal the bag to secure then shake gently to coat the fish evenly in flour.
    Dip the fish in the egg, letting any excess egg drain off, then toss the fish in the breadcrumb mixture to coat lightly. Place the fish on the prepared baking tray in a single layer. Cover the fish with plastic wrap and chill for 15 mins.
    Arrange the calamari and potato wedges on another baking tray. Bake for 20-25 minutes or until golden brown and cooked through.
    Meanwhile, spray the fish with oil, then bake in the oven for 10 mins. Turn the fish over and bake for 10 mins more or until golden and cooked through.
    Serve the fish, calamari and potatoes in baskets or bowls with dipping sauce and lemon wedges.
