Pork Tenderloin Stuffed With Apple - cooking recipe

3 tbsp butter
2 None apples, cored and cut into wedges
1 tsp brown sugar
1 lb pork tenderloin, butterflied
2 None shallots, finely chopped
2 cloves garlic, minced
1/2 cup white wine
1 1/4 cups heavy cream
1 tbsp Dijon mustard
None None mashed potatoes, to serve (optional)

Preheat oven to 350\u00b0F. Line a small roasting pan with parchment paper. In a large frying pan, heat 1 1/2 tbsp butter over medium heat and cook apples for 3-4 mins, stirring, until starting to soften. Add sugar then set aside to cool. Spread over pork tenderloin then roll up and secure with butcher's twine.
Heat remaining butter over medium heat, brown pork for 4-5 mins then transfer to prepared pan and bake for 5-10 mins, or until cooked to your liking. Cover with foil and let rest for 5 mins.
Meanwhile, add shallots and garlic to pan and cook for 2-3 mins, or until tender. Deglaze with wine then bring to a boil, stirring. Add cream and mustard and simmer for 2-3 mins, or until slightly thickened.
Serve stuffed pork tenderloin with shallot pan sauce and mashed potatoes, if desired.
