Insalata Caprese - cooking recipe
Ingredients

1 bunch basil
6-8 stalks mint
6 cloves garlic, peeled and roughly chopped
1 tbsp lemon juice
1/3 to 1/2 cup olive oil
1 None red onion, peeled and cut into fine slices
2 None large tomatoes, sliced
4 oz cherry tomatoes, halved
9 oz buffalo mozzarella, sliced
Preparation

For the salsa verde: puree the herbs, garlic, lemon juice and oil in food processor into a smooth sauce. Season to taste.
Mix the onion, tomatoes, cherry tomatoes and mozzarella, drizzle with salsa verde. Serve garnished with mint and basil.
