Chicken Campagnola - cooking recipe

Ingredients
    2 tbsp oil
    1 tbsp capers, chopped
    2 cloves garlic, minced
    2 None chicken breast fillets, halved horizontally, pounded thin
    2 tbsp lemon juice
    3 None tomatoes, thickly sliced
    1/2 lb mozzarella, thickly sliced
    None None baby spinach and fresh basil leaves, to serve
Preparation
    Preheat broiler.
    Heat oil in a large frying pan over medium heat. Add capers and garlic and cook for 1 min. Add chicken and cook for 2-3 mins per side, until golden brown. Add lemon juice and simmer for 30 seconds. Top each piece of chicken with tomatoes and mozzarella.
    Transfer to oven and broil for 1 min, until cheese bubbles and melts. Serve with baby spinach and basil.
