Chicken On Warm Lentil Salad - cooking recipe
Ingredients

2 tsp olive oil
4 None boneless chicken breasts, cut in half horizontally
1 None yellow onion, peeled and finely chopped
2 strips bacon, finely chopped
2 cloves garlic, peeled and crushed
1/4 cup dry white wine
1/4 cup chicken stock
2 x 14 oz cans lentils, rinsed, drained
9 oz cherry tomatoes, quartered
1/3 cup flat-leaf parsley, coarsely chopped
Preparation

Heat half the oil in a frying pan over high heat and cook the chicken, turning, until browned on both sides and cooked through. Cover to keep warm.
Heat the rest of the oil in a medium saucepan and stir in the onion, bacon and garlic over medium heat until the bacon is browned and the onion is soft.
Add the wine and cook until the wine is almost evaporated. Add the stock and lentils and cook until the lentils are hot and the stock is reduced by half. Remove from heat, then add the tomatoes and parsley, stirring gently to combine.
Serve the chicken over the warm lentil salad.
