Crisp Roasted Potatoes - cooking recipe

Ingredients
    6 None Russet potatoes, peeled and halved horizontally
    2 tbsp light olive oil
Preparation
    Preheat the oven to 425\u00b0F. Lightly oil a baking tray.
    Boil, steam or microwave the potatoes for 5 mins then drain. Pat dry with paper towels and leave to cool for 10 mins.
    Gently rake the rounded sides of the potatoes with the tines of a fork and place the potatoes in a single layer, cut-side down, on the baking tray. Brush with oil, season, then roast, uncovered, in the oven for about 50 mins or until the potatoes are browned and crisp. Serve hot
