Chicken, Artichoke And Lemon Skewers - cooking recipe

Ingredients
    3 None lemons, 1 zested and juiced, 2 cut into 8-12 wedges each
    2 tbsp olive oil
    1 clove garlic, minced
    1 lb chicken thighs, cut into 3/4 inch pieces
    2 (13.5 oz) cans artichoke hearts, drained, halved
    None None mixed greens, to serve
Preparation
    Combine lemon zest, lemon juice, olive oil and garlic. Thread chicken, artichokes and lemon wedges onto skewers then coat in marinade.
    Lightly coat a grill pan with oil and place over medium heat. Cook skewers for 10 mins, turning regularly, until browned and chicken is cooked through.
    Serve skewers with mixed greens.
