Bacon, Cheese And Chili Muffins - cooking recipe

12 oz bacon, coarsely chopped
2 2/3 cups self-rising flour
6 tbsp butter, chopped
1 tsp sweet paprika
1/2 tsp dried chili flakes
6 oz coarsely grated Cheddar cheese
1 (10 oz) can corn, drained
1 None large egg
1 cup buttermilk
Preparation

Preheat oven to 400\u00b0F. Oil 3 - 6-cup muffin pans.
Place a medium frying pan over medium-high heat. Cook bacon, stirring, until crisp then drain on paper towels.
In a food processor, combine flour, butter, paprika and chili flakes and process until mixture resembles breadcrumbs. Transfer to a medium bowl and stir in bacon, cheese and corn. Whisk together egg and buttermilk then add to dry ingredients and mix until combined. Spoon 1/4 cup batter into each muffin recess and bake for 20 mins. Turn muffins out onto a wire rack. Serve warm.
