Apricot Parfait - cooking recipe

Ingredients
    1 cup dried apricots, diced
    1/2 cup vanilla custard or pudding
    6 None lady finger cookies, crushed
    1/2 tsp orange zest
    1/2 lb strawberries, hulled, chopped
    2 tbsp sliced almonds, toasted
Preparation
    Bring apricots and 1/2 cup water to a boil. Simmer, uncovered, for 5 mins, or until soft. Let cool then process until smooth.
    Combine custard, cookie crumbles and orange zest. Distribute 1/2 between 4 - 8 oz serving glasses. Top with 1/2 apricot puree and 1/2 strawberries. Repeat layers. Top with sliced almonds. Cover with plastic wrap and chill for 10 mins.
