Hoisin Pork Rice-Paper Rolls - cooking recipe

Ingredients
    14 oz pork fillet
    2 tbsp hoisin sauce
    2 tsp peanut oil
    12 sheets round rice paper
    1/4 cup each fresh cilantro and mint leaves
    1 None carrot, thinly sliced
    1/4 None iceberg lettuce, finely sliced
    None None FOR THE SAUCE
    1/4 cup milk
    1/4 cup hoisin sauce
    2 tsp rice wine vinegar
    1/4 cup peanuts, crushed
Preparation
    Place pork in a shallow dish. Brush all over with hoisin sauce. Set aside to marinate for 10 mins.
    Heat oil in a skillet on medium heat. Cook pork for 3-4 mins each side, until cooked through. Transfer to a plate. Let stand, covered, for 10 mins. Use a sharp knife to cut pork into thin slices.
    Dip a sheet of rice paper into a bowl of warm water for 30 seconds or until just softened. Place on a clean tea towel. Arrange a few cilantro and mint leaves diagonally along the center. Top with 2-3 slices pork, some carrot and a little lettuce. Fold sides over. Roll up firmly to enclose filling. Repeat with remaining ingredients.
    For the sauce, combine milk and hoisin sauce in a small saucepan. Stir on medium heat for 2-3 mins, until slightly thickened. Mix in vinegar and half the nuts. Transfer to a serving bowl and sprinkle with remaining nuts. Serve with rolls.
