Ricotta Mashed Potatoes - cooking recipe
Ingredients

2 1/2 lb baking potatoes, cut into 1 inch cubes
3 cloves garlic, peeled
1 cup part-skim ricotta cheese
3 tbsp butter
3/4 cup warm milk
None None fresh chives, to garnish
Preparation

In a large saucepan, combine potatoes and garlic. Cover with water and season with 2 tsp salt. Bring to a boil then reduce heat and simmer until cooked through, about 10 mins. Drain. Return potatoes to pan and place over medium heat to dry out.
Mash potatoes and garlic with ricotta, butter and milk. Season. Garnish with fresh chives.
