Fettuccine With Mushrooms And Chili - cooking recipe

1/3 cup olive oil, plus 2 tbsp
1 lb button mushrooms, thinly sliced
2 None fresh large mild red chilies, thinly sliced
1 clove garlic, minced
18 oz fettuccine
3.5 oz baby spinach
Preparation

Heat 2 tbsp oil in a large frying pan over medium-high heat. Cook mushrooms for 10 mins, or until tender. Add chilies and garlic. Cook, stirring, until fragrant.
Meanwhile, cook pasta in boiling salted water until al dente. Drain, reserving 1/3 cup cooking liquid.
Combine mushrooms and pasta in a large bowl. Add remaining oil, spinach and reserved cooking liquid and toss gently to combine. Serve.
