Stuffed Tomatoes - cooking recipe
Ingredients

2 tbsp red wine vinegar
3 tbsp extra virgin olive oil
1 clove garlic, minced
6 None beefsteak tomatoes, tops cut off and diced, bottoms cored and seeds removed
1/2 cup cooked corn kernels
1/2 cup diced red pepper
2 None scallions, chopped
1/2 cup chopped marinated artichoke hearts
1 None avocado, diced
1/2 cup diced fresh mozzarella cheese
2 tbsp chopped fresh parsley
2 tbsp chopped fresh basil, plus 6 sprigs for garnish
Preparation

Whisk together vinegar, oil and garlic. Add diced tomato, corn, red pepper, scallions, avocado, artichokes, mozzarella cheese and herbs. Season then distribute between tomatoes. Transfer to a serving platter and garnish with basil sprigs.
